Recipies

Chicken Crescent Squares

8oz cream cheese
1 T butter
1/8 t salt
1/8 t pepper
2 T milk
1 t chives (or finely chopped onion)
2 c Cooked cubed chicken
1 can of crescent rolls (makes 4 servings)
1/2 c bread crumbs
Spray butter

Blend cream cheese and butter until smooth.
Add seasonings
Stir in chicken
Seperate crescent rolls into 4 squares (leave 2 triangles together to form square)
Spoon in 1/2 of mixture into center of squares. Pull all four corners of dough to center and twist. Spray tops with butter and spoon bread crumbles over top. Cook at 350 for 20-25 min or until golden brown.

Ratatouille

1/4 c Vegtable oil
2 large onions finely chopped
1/2 t garlic salt
1 eggplant diced in 1/2'' squares
6 small zucchini, sliced
2 bell peppers, seeded and diced
1 summer squash, sliced
2 t salt
1/2 c minced parsley (optional)
4 large tomatoes (or can of diced tomatoes)

Heat vegtable oil
Add and saute' onions and garlic salt for 5 min
Stir in Eggplant, zucchini, Bell peppers, squash, salt and parsley.
(add more veg oil if needed to keep from sticking)
Cover and simmer for 30 mins.
Add tomatoes and cook at moderate heat for 10 minutes.
It's much better than it sounds!
